GEORGE’S® Bloody Mary Breakfast Bake
3/4 cup your choice GEORGE’S® Bloody Mary Mix (Spicy, Mild, Frank’s RedHot®, Old Bay®, or Zatarain’s®)
1/2 cup salsa
8 large eggs
4 oz shredded cheddar cheese
salt and pepper
8 slices bacon
2 cups frozen shredded hash browns
2 T butter
Chives for garnish if desired.
- Preheat oven to 450.
- Thaw potatoes and squeeze out as much water as you can by pressing them in your hand in a tea or a kitchen towel. Melt the butter and mix it into the potatoes. Season with salt and pepper. Press out the potatoes on the bottom of a pie pan and press them well to form the bottom crust. Bake for 20 minutes while you get the rest of the ingredients ready.
- Chop up the bacon and cook until brown and crisp. Then put on to a paper towel lined plate.
- Mix GEORGE’S® with the salsa then beat in the eggs. Whisk well, then stir in the cheese and season with salt and pepper.
- When the potatoes are starting to brown, pull them out of the oven (approximately after 20 min). Turn the oven down to 350. Pour the Bloody Mary egg mixture into the pie pan over the potatoes. Sprinkle the bacon on top and bake for about 30-35 minutes until the center is just set.
